Since 2016, Baltimore-based Chef Jasmine Norton (The Urban Oyster/The Urban Burger) has turned her love of seafood into a culinary movement focused on making a regional staple food accessible to new audiences. Drawing on the observation that her family and friends were open to cooked seafood, Norton’s menu features chargrilled and fried oysters presented in creative combinations.
